Winemaker’s Note. In 1990, exceptional vintage conditions presented Penfolds’ winemakers an opportunity to make another wine in the tradition of the great Bin 60A, Bin 7 and Bin 80A. This wine, Bin 90A, is a blend of selected parcels of the finest Coonawarra Cabernet Sauvignon and Barossa Valley Shiraz.
Featuring rich, concentrated varietal flavours with balanced oak complexity and a lingering firm tannin finish, Bin 90A has been crafted in the Penfolds tradition and cellared correctly will continue to develop well into the next century.
All Penfolds red wines are made to mature in the bottle and will continue to develop many years after release. Extract tannins and tartrates are not removed at the time of bottling, as it is these elements that help retain the flavour and settle as a crust in the bottle.
To fully appreciate a mature red you should decant the wine. Be careful not to disturb the crust. Pour the wine into a decanter in one continuous movement against a light, so you can stop when the sediment reaches the bottle neck. This can be done just prior to drinking. Decanting allows the wine to ‘breathe’ sufficiently without losing the rich bouquet and flavours that have developed in the bottle.
