2015 Wendouree Cabernet Sauvignon. Wendouree Cabernet Sauvignon is made from old vines grown at the Wendouree Vineyard. There are two separate plantings of cabernet sauvignon at Wendouree, the cool central block and the western site. Vines in the cooler central block have smaller berries and are known for their “spicy characters and firm tannins”. Vines from the western site bring “floral” notes and a softer structure. Winemakers Lita and Tony Brady – make a cabernet sauvignon that articulates the individual character of this unique site. After vinification in open fermenters, the wine completes fermentation and remains in stainless steel until November before maturation in new (about 25%) and used French oak for 12 months.
Wendouree Cabernet Sauvignon is a very powerful wine demanding cellaring. There isn’t a lot of Wendouree Cabernet Sauvignon made, it is quite difficult obtaining an allocation even for those fortunate enough to be on the Wendouree Cellars mailing list.
