2008 Hillcrest Premium Cabernet Sauvignon.  Hillcrest Vineyard is located in Woori Yallock, the Upper Yarra Valley, about 30 mins from Ringwood or to some, about 30 minutes from Costco.  Hillcrest Vineyard make tiny amounts for Pinot Noir, Chardonnay and Cabernet Merlot or sometimes Cabernet Sauvignon and a Merlot.  Their wines are pretty fairly awesome, they have an ability to age for a very long time.  

2008 was another good year in Victoria’s Yarra Valley.  The 2008 Hillcrest Premium Cabernet Sauvignon is a deeply fruited wine, it sits somewhere within the medium bodied spectrum with a firm’ish but ripe tannin profile.  I though this wine stood out more for its rich blackcurrant and earthiness flavours, it still has a long life ahead of it.

The 2008 Hillcrest Premium Cabernet Sauvignon is a wine that required cellaring when it was released, these few bottles have 7 or so years under their belt but will go another 10 to 15 years.  This wine is made from some of the oldest vines in the Yarra Valley.
