2007 Jasper Hill Emily’s Paddock Shiraz Cabernet Franc is an outstanding and very popular Heathcote shiraz blend.  Jasper Hill Emily's Paddock Shiraz Cabernet Franc is a must for any fan of Australia’s Shiraz, it is a powerfully fruited and well structured wines.  Jasper Hill is located in the Heathcote wine region of Victoria and was established in 1975.  
 
Jasper Hill Emily’s Paddock Shiraz Cabernet Franc is named after one of Jasper Hill owners Ron and Elva's daughter, this vineyard about about 1.5kms apart from the Geogia's Paddock Vineyard.  Wine making is all about adopting an old-fashioned, “less is more” approach.  The wines are nurtured rather than interfered with, acid adjustments do not occur, nor do additions of yeast or nutrients.  When the wine is fermented it is done so without cooling, malolactic fermentation occurs and Jasper Hill wines are then bottled without fining.  Put simply, Jasper Hill wines make themselves; they are a pure expression of terroir, as unique as the land on which they were grown. 
 
Jasper Hill has placed the Heathcote wine region firmly in the minds of Shiraz lovers around the world.  Chapoutier’s of the Rhone Valley have invested in a joint venture with Jasper Hill develop a vineyard adjacent to the existing property.
 
2007 Jasper Hill Emily’s Paddock Shiraz Cabernet Franc is brooding in color with a dark chocolate/cocoa character weaving among spice and minerality on the palate.  The wine is concentrated and silky in texture.  Jasper Hill Emily’s Paddock Shiraz Cabernet Franc is an elegant wine with great persistence of flavor.
