2002 Wendouree Cabernet Sauvignon.  Wendouree Cellars, located in South Australia's Clare Valley, make highly sought after wines.  Wendouree Cabernet Sauvignon is one of those wines that collectors love to secure and claim ownership bragging rights.  Wendouree Cabernet Sauvignon is difficult to find for sale and it is hard enough securing some for those lucky enough to be on the mailing list.   

The vines were planted in the mid 1970's at Wendouree Cellars.  The two sites are the western block and the other is the cool central block.  Fruit from the western site is softure in structure with floral notes, whilst the fruit from the cooler central block has smaller berries with spicy characters and firmish tannins.  

The wine making process, vinification takes place in open fermenters, the wine completes the fermentation process and remains in stainless steel until November.  The wine is then matured in French oak for 12 months, of which 25% is new oak and the remainder is used.  Wendouree Cabernet Sauvignon is a muscular wine, it really does show its best after 10 to 12 years of cellaring. 

2002 was a great vintage throughout South Australia, rated 9/10.
